Artery Lovers Breakfast Muffin


There are dozens of scrambled tofu recipes out there that taste great and fulfill that craving for eggs but I was having a hard time getting them to work on sandwiches.  Recently I was playing around and came up with this recipe which I must say is most excellent.  You accompany the sandwich with what ever you like.  For the sandwich pictured the following was used:

Cheesy Spinach 
Flying Pig Bacon (TM) by Don't Fear The Vegan
Eggy Tofu
Tomato
English Muffin
Vegan Mayo

Eggy Tofu:
1 package firm/super firm tofu
1/2 tbsp Earth Balance
1/2 tsp onion powder
1/2 tsp garlic powder
1/8 tsp cumin
1/2 tsp tumeric
2 tbsp Braggs Amino acid
1 Tbsp Nutritional Yeast
1/4 cup water

slice package firm tofu

Melt Earth Balance in frying pan over medium heat.  Cook tofu so it is golden on both sides.  While cooking tofu mix remaining ingredients in a bowl.  Once tofu is golden pour mixture into pan and make sure tofu is evenly coated.  It is now ready to be served as you wish!
*If you use a wheat free butter source this would be Gluten Free.
