No Need For The Jaeger, Schnitzel


My favorite German dish has always been Jaeger Schnitzel and before becoming vegetarian I would try this dish at every German restaurant I went to.  When traveling in Germany this dish may vary slightly depending on the region so there were many different variations when I was reading recipes. The finished dish brought back memories.  The gravy I am use to though is more golden brown in color and I am thinking that must happen from the fat when you use meat.  Now to just figure out how to make vegan spaetzle and I will be set.  Guten Appetit!

2 7oz packs Gardein Chick n' fillets
4 tbsp olive oil
1/3 cup flour
1/2 cup chopped carrots
1 medium sized chopped yellow onion
1/2 cup chopped celery
2 bay leaves
1 tsp dried thyme
1 1/2 cup red wine
1 vegan beef flavored bouillon cube dissolved in 3/4 cup water
1/4 tsp liquid smoke
1/4 tsp vegan Worcestershire sauce
3 tbsp Earth Balnce
8 oz sliced crimini mushrooms
8 oz button mushrooms (keep whole)
8 oz pearl onions (boiled)
1tsp cornstarch mixed in 1 tbsp water
1 tbsp vegan sour cream

Preheat oven to 200 degrees
Heat oil in a large frying pan over medium heat. Put flour in a bowl and cover both side of fillet with flour.  Place covered fillets in oil and fry until golden brown on both sides. Try to only flip once. When golden brown on both sides remove from pan and put in oven to stay warm.  In same pan(don't clean it) add carrots, chopped onions, celery, thyme and bay leaves.  Saute till onions are translucent.  Stir in wine, reduce to half. Strain liquid (you want to keep only the liquid and get rid of all vegetables.) Pour liquid back in the pan. Add bouillon, liquid smoke, Worcestershire sauce, 1 tbsp Earth Balance, all mushrooms, and pearl onions. Bring to slight boil. Add remaining Earth Balance and cornstarch.   Reduce heat and simmer for 20 minutes. Mix in sour cream. Add fillets back into sauce and cook for five more minutes.  Serve fillets with gravy on top.  We ate it with Scalloped Potatoes though it would also be good with Mashed Garlic Red Potatoes.
